Passion Fruit Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1/2 cup passion fruit puree

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Beat in the eggs one at a time, then stir in the passion fruit puree.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake in the preheated oven for 45 minutes, or until the center is almost set.
  6. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
