Passion Fruit Mousse

Ingredients

  • 1 cup passion fruit pulp
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 tbsp gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. In a saucepan, combine the passion fruit pulp, sugar, and 1/4 cup of water. Cook over medium heat, stirring constantly, until the sugar has dissolved.
  2. In a small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
  3. Add the bloomed gelatin to the warm passion fruit mixture, stirring until completely dissolved. Remove from heat and let it cool to room temperature.
  4. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  5. Gently fold the cooled passion fruit mixture into the whipped cream until fully combined.
  6. Pour the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
  7. Once set, garnish with fresh passion fruit pulp or whipped cream before serving.
