Ingredients
- 1 cup passion fruit pulp
- 1/2 cup sugar
- 1/4 cup water
- 1 tbsp gelatin
- 1/4 cup cold water
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- In a saucepan, combine the passion fruit pulp, sugar, and 1/4 cup of water. Cook over medium heat, stirring constantly, until the sugar has dissolved.
- In a small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
- Add the bloomed gelatin to the warm passion fruit mixture, stirring until completely dissolved. Remove from heat and let it cool to room temperature.
- In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Gently fold the cooled passion fruit mixture into the whipped cream until fully combined.
- Pour the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
- Once set, garnish with fresh passion fruit pulp or whipped cream before serving.
