Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup passionfruit pulp
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs, one at a time, and vanilla extract, mixing well after each addition.
- Pour the cream cheese mixture over the crust and spread it evenly. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Allow the cheesecake to cool to room temperature, then refrigerate for at least 3 hours or until completely chilled.
- In a small bowl, whisk together the passionfruit pulp and powdered sugar. Spread the passionfruit topping over the chilled cheesecake.
- Using the parchment paper overhang, lift the cheesecake out of the pan and place it on a cutting board. Cut into bars and serve.
