Passionfruit Cheesecake Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup passionfruit pulp
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs, one at a time, and vanilla extract, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust and spread it evenly. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  5. Allow the cheesecake to cool to room temperature, then refrigerate for at least 3 hours or until completely chilled.
  6. In a small bowl, whisk together the passionfruit pulp and powdered sugar. Spread the passionfruit topping over the chilled cheesecake.
  7. Using the parchment paper overhang, lift the cheesecake out of the pan and place it on a cutting board. Cut into bars and serve.
