Ingredients
- 2 cups heavy cream
- 1/2 cup whole milk
- 1/2 cup sugar
- 1 vanilla bean, split and seeds scraped
- 4 gelatin sheets
- 1/2 cup passionfruit puree
Instructions
- In a saucepan, combine the heavy cream, milk, sugar, and vanilla bean with seeds. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
- Meanwhile, place the gelatin sheets in a bowl of cold water and let them soften for about 5 minutes.
- Once the cream mixture is hot, remove the saucepan from the heat. Squeeze the excess water from the gelatin sheets and add them to the cream mixture, stirring until completely dissolved.
- Stir in the passionfruit puree until well combined.
- Strain the mixture through a fine-mesh sieve into a large pouring jug to remove the vanilla bean and any lumps.
- Pour the mixture into 6 serving glasses or ramekins. Chill in the refrigerator for at least 4 hours, or until set.
- Once set, serve the passionfruit panna cotta chilled, garnished with fresh passionfruit seeds if desired.
