Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 1 cup passionfruit pulp
- 1/2 cup granulated sugar
- 3 eggs
- 1/2 cup heavy cream
Instructions
- In a food processor, pulse together the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- While pulsing, gradually add the ice water until the dough comes together. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and transfer to a 9-inch pie dish. Trim the edges and crimp as desired.
- In a bowl, whisk together the passionfruit pulp, sugar, eggs, and heavy cream. Pour the mixture into the prepared crust.
- Bake for 25-30 minutes, or until the filling is set and the crust is golden brown. Allow to cool before serving.
