Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 1 cup passionfruit pulp
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1/2 cup heavy cream

Instructions

  1. In a food processor, pulse together the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  2. While pulsing, gradually add the ice water until the dough comes together. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the dough on a floured surface and transfer to a 9-inch pie dish. Trim the edges and crimp as desired.
