Ingredients

  • 400g of pasta
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 400g of cherry tomatoes, halved
  • Salt and pepper to taste
  • Grated pecorino cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant.
  3. Add the cherry tomatoes to the skillet and cook until they start to soften and release their juices.
  4. Season the tomato mixture with salt and pepper to taste.
  5. Add the cooked pasta to the skillet and toss to combine with the tomato mixture.
  6. Serve the Matera-style Pasta hot, topped with grated pecorino cheese.
