Ingredients
- 400g of pasta
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 small onion, finely chopped
- 400g of cherry tomatoes, halved
- Salt and pepper to taste
- Grated pecorino cheese for serving
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant.
- Add the cherry tomatoes to the skillet and cook until they start to soften and release their juices.
- Season the tomato mixture with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to combine with the tomato mixture.
- Serve the Matera-style Pasta hot, topped with grated pecorino cheese.
