Pasta Rasta, also known as Rasta Pasta, is a popular dish in Caribbean Chinese Cuisine that combines the flavors of the Caribbean with Chinese cooking techniques. This creamy and flavorful pasta dish is a perfect fusion of two distinct culinary traditions.
Ingredients
- 8 oz fettuccine pasta
- 2 tbsp olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 cup coconut milk
- 1 cup heavy cream
- 1 tsp curry powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- In a large pot of boiling salted water, cook the fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and garlic. Sauté until the vegetables are tender.
- Pour in the coconut milk and heavy cream. Stir in the curry powder, dried thyme, salt, and pepper. Let the sauce simmer for 5 minutes.
- Add the cooked fettuccine to the skillet and toss to coat the pasta with the creamy sauce.
- Sprinkle the grated Parmesan cheese over the pasta and toss again to combine.
- Remove from heat and serve the Pasta Rasta hot, garnished with fresh herbs if desired.
