Ingredients

  • 8 oz fettuccine pasta
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1 tsp curry powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot of boiling salted water, cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and garlic. Sauté until the vegetables are tender.
  3. Pour in the coconut milk and heavy cream. Stir in the curry powder, dried thyme, salt, and pepper. Let the sauce simmer for 5 minutes.
  4. Add the cooked fettuccine to the skillet and toss to coat the pasta with the creamy sauce.
  5. Sprinkle the grated Parmesan cheese over the pasta and toss again to combine.
  6. Remove from heat and serve the Pasta Rasta hot, garnished with fresh herbs if desired.
