Pasta With Jerk Chicken (rasta Pasta)

Ingredients
- 8 oz penne pasta
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 tbsp Jamaican jerk seasoning
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 cup coconut milk
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the penne pasta according to package instructions. Drain and set aside.
- In a bowl, toss the chicken strips with Jamaican jerk seasoning until well coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, and garlic. Sauté until the vegetables are tender, about 5 minutes.
- Pour in the coconut milk and bring to a simmer. Stir in the cooked pasta, cooked chicken, and Parmesan cheese. Cook for an additional 2-3 minutes until the sauce thickens and coats the pasta.
- Season with salt and pepper to taste. Serve hot and enjoy!
