Pastai Pysgodwr (fisherman's Pie)
Pastai Pysgodwr, also known as Fisherman's Pie, is a traditional dish from Pembrokeshire, Wales. This hearty and comforting pie is made with flaky fish, creamy mashed potatoes, and a savory sauce, making it a perfect meal for a cozy night in.
Ingredients
- 500g white fish fillets, such as cod or haddock
- 750g potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 carrots, diced
- 200ml fish stock
- 100ml milk (or dairy-free alternative)
- 50g butter (or dairy-free spread)
- 2 tbsp flour (or gluten-free flour)
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Boil the potatoes in a large pot of salted water until tender. Drain and mash with the milk and butter. Season with salt and pepper.
- In a separate pan, sauté the onion and carrots until softened. Add the flour and cook for 1-2 minutes.
- Pour in the fish stock and stir until thickened to make a sauce. Add the fish fillets and simmer for 5 minutes.
- Transfer the fish mixture to a baking dish and top with the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling.
