Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 750g potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 200ml fish stock
  • 100ml milk (or dairy-free alternative)
  • 50g butter (or dairy-free spread)
  • 2 tbsp flour (or gluten-free flour)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Boil the potatoes in a large pot of salted water until tender. Drain and mash with the milk and butter. Season with salt and pepper.
  3. In a separate pan, sauté the onion and carrots until softened. Add the flour and cook for 1-2 minutes.
  4. Pour in the fish stock and stir until thickened to make a sauce. Add the fish fillets and simmer for 5 minutes.
  5. Transfer the fish mixture to a baking dish and top with the mashed potatoes.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling.
