Ingredients
- 2 cups grated cassava
- 1 onion, finely chopped
- 2 eggs
- 1/4 cup all-purpose flour

- 1/2 teaspoon ground black pepper

Instructions
- In a large bowl, mix together the grated cassava, chopped onion, eggs, flour, salt, and black pepper until well combined.
- Heat vegetable oil in a frying pan over medium heat.
- Scoop spoonfuls of the cassava mixture and carefully drop them into the hot oil.
- Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
