Pasteis de Tentúgal (Tentúgal Pastries)

Ingredients

  • 1 package of frozen puff pastry, thawed
  • 6 egg yolks
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. In a saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves and the mixture reaches a syrupy consistency.
  2. In a separate bowl, whisk the egg yolks until smooth. Slowly pour the hot sugar syrup into the egg yolks, whisking constantly to prevent curdling.
  3. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a custard-like consistency. Remove from heat and stir in the butter and vanilla extract. Let the custard cool to room temperature.
  4. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut it into 24 equal squares.
  5. Place a spoonful of the cooled custard in the center of half of the pastry squares. Place the remaining squares on top and seal the edges with a fork.
  6. Transfer the pastries to a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the pastries are golden brown and puffed.
  7. Remove from the oven and let the pastries cool. Dust with powdered sugar before serving.
