Pasteis de Tentúgal (Tentúgal Pastries)

Ingredients
- 1 package of frozen puff pastry, thawed
- 6 egg yolks
- 1 cup sugar
- 1/2 cup water
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- In a saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves and the mixture reaches a syrupy consistency.
- In a separate bowl, whisk the egg yolks until smooth. Slowly pour the hot sugar syrup into the egg yolks, whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a custard-like consistency. Remove from heat and stir in the butter and vanilla extract. Let the custard cool to room temperature.
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut it into 24 equal squares.
- Place a spoonful of the cooled custard in the center of half of the pastry squares. Place the remaining squares on top and seal the edges with a fork.
- Transfer the pastries to a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the pastries are golden brown and puffed.
- Remove from the oven and let the pastries cool. Dust with powdered sugar before serving.
