Ingredients

  • 1 lb pork shoulder, diced
  • 4 large potatoes, peeled and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1/4 cup milk
  • 1/4 cup butter
  • 2 eggs
  • 1/4 cup grated cheese

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced pork and cook until browned.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the cumin, paprika, salt, and pepper. Pour in the chicken broth and simmer for 30 minutes.
  4. Meanwhile, boil the sliced potatoes until tender. Drain and mash with the milk and butter. Season with salt and pepper.
  5. Preheat the oven to 375°F (190°C).
  6. Beat the eggs in a bowl and stir in the grated cheese.
  7. Spread half of the mashed potatoes in a greased baking dish. Pour the pork mixture over the potatoes, then top with the remaining mashed potatoes.
  8. Pour the beaten eggs and cheese mixture over the top layer of mashed potatoes.
  9. Bake for 30 minutes, or until the top is golden brown.
  10. Serve the Pastel de Cerdo hot and enjoy!
