Ingredients
- 1 lb pork shoulder, diced
- 4 large potatoes, peeled and sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- 1/4 cup milk
- 1/4 cup butter
- 2 eggs
- 1/4 cup grated cheese
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced pork and cook until browned.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the cumin, paprika, salt, and pepper. Pour in the chicken broth and simmer for 30 minutes.
- Meanwhile, boil the sliced potatoes until tender. Drain and mash with the milk and butter. Season with salt and pepper.
- Preheat the oven to 375°F (190°C).
- Beat the eggs in a bowl and stir in the grated cheese.
- Spread half of the mashed potatoes in a greased baking dish. Pour the pork mixture over the potatoes, then top with the remaining mashed potatoes.
- Pour the beaten eggs and cheese mixture over the top layer of mashed potatoes.
- Bake for 30 minutes, or until the top is golden brown.
- Serve the Pastel de Cerdo hot and enjoy!
