Ingredients

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, combine the sugar and water over medium heat. Cook, stirring occasionally, until the mixture turns into a golden caramel. Pour the caramel into the prepared cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
  3. In a blender, combine the sweetened condensed milk, coconut milk, shredded coconut, eggs, melted butter, and vanilla extract. Blend until smooth.
  4. In a separate bowl, sift together the flour and baking powder. Gradually add the flour mixture to the blender and blend until just combined.
  5. Pour the batter over the hardened caramel in the cake pan.
  6. Place the cake pan in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the cake pan.
  7. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake pan from the water bath and allow it to cool to room temperature. Refrigerate for at least 4 hours, or overnight, before serving.
  9. To serve, run a knife around the edge of the cake pan. Place a serving plate on top of the pan, then carefully invert the cake onto the plate. The caramel will create a luscious topping for the flan de coco.
