Ingredients
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 1 cup shredded coconut
- 1/2 cup sugar
- 1/4 cup water
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3 eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a saucepan, combine the sugar and water over medium heat. Cook, stirring occasionally, until the mixture turns into a golden caramel. Pour the caramel into the prepared cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
- In a blender, combine the sweetened condensed milk, coconut milk, shredded coconut, eggs, melted butter, and vanilla extract. Blend until smooth.
- In a separate bowl, sift together the flour and baking powder. Gradually add the flour mixture to the blender and blend until just combined.
- Pour the batter over the hardened caramel in the cake pan.
- Place the cake pan in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the cake pan.
- Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.
- Remove the cake pan from the water bath and allow it to cool to room temperature. Refrigerate for at least 4 hours, or overnight, before serving.
- To serve, run a knife around the edge of the cake pan. Place a serving plate on top of the pan, then carefully invert the cake onto the plate. The caramel will create a luscious topping for the flan de coco.
