Ingredients
- 2 cups masa harina
- 1 cup chicken broth
- 1/2 cup lard or vegetable shortening
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups shredded cooked chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup pitted green olives, sliced
- 1/4 cup raisins
- 1/2 cup chicken broth
Instructions
- In a large bowl, mix the masa harina, chicken broth, lard, baking powder, and salt to make the tamale dough.
- Spread half of the tamale dough in the bottom of a greased baking dish to form the base of the pie.
- In a separate pan, sauté the onion, garlic, and bell pepper until softened.
- Add the shredded chicken, tomato sauce, cumin, oregano, salt, and pepper to the pan. Cook for 5 minutes, then stir in the olives, raisins, and chicken broth.
- Pour the chicken filling over the tamale dough in the baking dish.
- Top the filling with the remaining tamale dough, spreading it evenly to cover the chicken mixture.
- Cover the baking dish with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
- Let the Pastel de Tamal de Pollo cool for a few minutes before slicing and serving.
