Pastel De Tamal De Pollo (honduran Chicken Tamale Pie)

Ingredients

  • 2 cups masa harina
  • 1 cup chicken broth
  • 1/2 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups shredded cooked chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup pitted green olives, sliced
  • 1/4 cup raisins
  • 1/2 cup chicken broth

Instructions

  1. In a large bowl, mix the masa harina, chicken broth, lard, baking powder, and salt to make the tamale dough.
  2. Spread half of the tamale dough in the bottom of a greased baking dish to form the base of the pie.
  3. In a separate pan, sauté the onion, garlic, and bell pepper until softened.
  4. Add the shredded chicken, tomato sauce, cumin, oregano, salt, and pepper to the pan. Cook for 5 minutes, then stir in the olives, raisins, and chicken broth.
  5. Pour the chicken filling over the tamale dough in the baking dish.
  6. Top the filling with the remaining tamale dough, spreading it evenly to cover the chicken mixture.
  7. Cover the baking dish with foil and bake in a preheated oven at 375°F (190°C) for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
  9. Let the Pastel de Tamal de Pollo cool for a few minutes before slicing and serving.
