Pastelón Passion (Pasión de Pastelón)

Ingredients

  • 3 ripe plantains, peeled and sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a skillet over medium heat. Add the onions and garlic, and cook until softened.
  3. Add the ground beef, oregano, cumin, salt, and pepper. Cook until the beef is browned.
  4. Stir in the tomato sauce and simmer for 5 minutes.
  5. Layer half of the sliced plantains in a greased baking dish.
  6. Spread half of the beef mixture over the plantains, then sprinkle half of the mozzarella and cheddar cheese on top.
  7. Repeat the layers with the remaining plantains, beef mixture, and cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.
