Pasulj (montenegrin Style Bean Soup)

Ingredients

  • 1 pound dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 6 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Rinse the dried white beans and soak them in water overnight.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic, bay leaf, paprika, and dried thyme to the pot. Cook for another 2 minutes.
  4. Drain the soaked beans and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beans are tender.
  6. Remove the bay leaf and adjust the seasoning if needed. Serve the pasulj hot, garnished with fresh parsley if desired.
