Pasulj (montenegrin Style Bean Soup)
Pasulj is a traditional Montenegrin bean soup that is hearty, flavorful, and perfect for a comforting meal. This recipe is a staple in Montenegrin cuisine and is often enjoyed during the colder months.
Ingredients
- 1 pound dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 6 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Rinse the dried white beans and soak them in water overnight.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic, bay leaf, paprika, and dried thyme to the pot. Cook for another 2 minutes.
- Drain the soaked beans and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat to low. Simmer for 1.5 to 2 hours, or until the beans are tender.
- Remove the bay leaf and adjust the seasoning if needed. Serve the pasulj hot, garnished with fresh parsley if desired.
