Ingredients
- 4 green plantains
- 1 cup vegetable oil
- Salt to taste
- 1 cup shredded beef or chicken
- 1 cup guacamole
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1/2 cup crumbled queso fresco
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the plantain slices for 3-4 minutes on each side, until golden brown and tender.
- Remove the fried plantains from the skillet and place them on a cutting board.
- Using a flat surface, such as a plate or a glass, flatten the plantain slices to about 1/4 inch thickness.
- Return the flattened plantains to the skillet and fry for an additional 2-3 minutes on each side, until crispy.
- Remove the plantains from the skillet and drain them on paper towels to remove excess oil.
- Season the plantains with salt to taste.
- Top the patacones with shredded beef or chicken, guacamole, diced tomatoes, chopped cilantro, and crumbled queso fresco.
