Patacon Pisao: Colombian Smashed Plantains

Ingredients

  • 4 green plantains
  • 1 cup vegetable oil
  • Salt to taste
  • 1 cup shredded beef or chicken
  • 1 cup guacamole
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/2 cup crumbled queso fresco

Instructions

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Fry the plantain slices for 3-4 minutes on each side, until golden brown and tender.
  4. Remove the fried plantains from the skillet and place them on a cutting board.
  5. Using a flat surface, such as a plate or a glass, flatten the plantain slices to about 1/4 inch thickness.
  6. Return the flattened plantains to the skillet and fry for an additional 2-3 minutes on each side, until crispy.
  7. Remove the plantains from the skillet and drain them on paper towels to remove excess oil.
  8. Season the plantains with salt to taste.
  9. Top the patacones with shredded beef or chicken, guacamole, diced tomatoes, chopped cilantro, and crumbled queso fresco.
