Instructions
- In a large skillet, heat vegetable oil over medium-high heat. Fry the plantain slices until golden brown, about 3 minutes per side. Remove from the skillet and drain on paper towels. Flatten the fried plantains with a flat surface, such as a plate or the bottom of a glass. Return the flattened plantains to the hot oil and fry for an additional 2 minutes per side, until crispy. Remove from the oil and drain on paper towels. Sprinkle with salt while still hot.
- In a separate skillet, heat a small amount of oil over medium heat. Add the chopped onion, garlic, and jalapeño pepper. Sauté until the onions are translucent and the mixture is fragrant, about 3-4 minutes.
- Add the black beans, cumin, and paprika to the skillet. Cook for 5 minutes, stirring occasionally, until the beans are heated through and the flavors are well combined.
- Transfer the bean mixture to a food processor. Add the chopped cilantro and lime juice. Blend until smooth. Season with salt and pepper to taste.
- Serve the crispy patacones with the spicy black bean dip on the side.
