Ingredients
- 2 green plantains
- 1 cup vegetable oil
- 1 cup shredded chicken
- 1 cup refried beans
- 1/2 cup diced tomatoes
- 1/2 cup diced avocado
- 1/4 cup chopped cilantro
- 1/4 cup crumbled queso fresco
- Salt and pepper to taste
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a skillet over medium heat.
- Fry the plantain slices for 2-3 minutes on each side, until they are golden and crispy. Remove from the oil and flatten them with a plate or the bottom of a glass.
- Return the flattened plantains to the oil and fry for an additional 2-3 minutes on each side, until they are crispy and golden brown. Remove from the oil and drain on paper towels.
- Season the shredded chicken with salt and pepper.
- Top each plantain round with a spoonful of refried beans, shredded chicken, diced tomatoes, diced avocado, chopped cilantro, and crumbled queso fresco.
- Serve the patacones rellenos immediately and enjoy!
