Patacones Rellenos: Colombian Stuffed Fried Plantains

Ingredients

  • 2 green plantains
  • 1 cup vegetable oil
  • 1 cup shredded chicken
  • 1 cup refried beans
  • 1/2 cup diced tomatoes
  • 1/2 cup diced avocado
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled queso fresco
  • Salt and pepper to taste

Instructions

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the vegetable oil in a skillet over medium heat.
  3. Fry the plantain slices for 2-3 minutes on each side, until they are golden and crispy. Remove from the oil and flatten them with a plate or the bottom of a glass.
  4. Return the flattened plantains to the oil and fry for an additional 2-3 minutes on each side, until they are crispy and golden brown. Remove from the oil and drain on paper towels.
  5. Season the shredded chicken with salt and pepper.
  6. Top each plantain round with a spoonful of refried beans, shredded chicken, diced tomatoes, diced avocado, chopped cilantro, and crumbled queso fresco.
  7. Serve the patacones rellenos immediately and enjoy!
