Patacones (spiced Plantain Fritters)
Patacones are a popular dish in St. Kitts and Nevis, made from spiced plantains that are fried to crispy perfection. These fritters are a delicious snack or side dish that showcase the flavors of the Caribbean.
Ingredients
- 2 ripe plantains
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Oil for frying
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- In a bowl, combine the cumin, paprika, cayenne pepper, and salt.
- Coat the plantain slices with the spice mixture.
- Heat oil in a pan over medium heat.
- Fry the plantain slices for 2-3 minutes on each side, until golden brown and crispy.
- Remove from the pan and place on a paper towel to drain excess oil.
- Flatten the fried plantain slices with the back of a spatula or a plantain press.
- Return the flattened plantains to the pan and fry for an additional 1-2 minutes on each side, until crispy and golden brown.
- Remove from the pan, drain on paper towels, and sprinkle with additional salt if desired.
