Patagonian Seafood Paella (Paella de Mariscos Patagónica)

This flavorful and colorful dish is a seafood lover's delight, combining a variety of fresh seafood with aromatic spices and saffron-infused rice.
Ingredients
- 1 lb fresh mussels, cleaned and debearded
- 1 lb large shrimp, peeled and deveined
- 1 lb calamari, cleaned and sliced into rings
- 1 cup white fish fillets, cut into chunks
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tomato, diced
- 2 cups Arborio rice
- 4 cups seafood or chicken broth
- 1 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving
- Salt and pepper to taste
Instructions
- In a large paella pan or wide skillet, heat some olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Add the diced tomato and cook until it starts to break down.
- Stir in the Arborio rice, saffron threads, and smoked paprika. Cook for a couple of minutes, stirring constantly.
- Pour in the seafood or chicken broth and bring to a simmer. Cook for about 15 minutes, stirring occasionally.
- Add the mussels, shrimp, calamari, and white fish to the pan. Gently press the seafood into the rice mixture. Cook for an additional 10-15 minutes until the seafood is cooked through and the rice is tender.
- Sprinkle the frozen peas over the paella and let them heat through for a few minutes.
- Remove the pan from the heat and let it rest for 5 minutes. Garnish with chopped parsley and serve with lemon wedges.
