Ingredients

  • 1 lb fresh mussels, cleaned and debearded
  • 1 lb large shrimp, peeled and deveined
  • 1 lb calamari, cleaned and sliced into rings
  • 1 cup white fish fillets, cut into chunks
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, diced
  • 2 cups Arborio rice
  • 4 cups seafood or chicken broth
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • Lemon wedges for serving
  • Salt and pepper to taste

Instructions

  1. In a large paella pan or wide skillet, heat some olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
  2. Add the diced tomato and cook until it starts to break down.
  3. Stir in the Arborio rice, saffron threads, and smoked paprika. Cook for a couple of minutes, stirring constantly.
  4. Pour in the seafood or chicken broth and bring to a simmer. Cook for about 15 minutes, stirring occasionally.
  5. Add the mussels, shrimp, calamari, and white fish to the pan. Gently press the seafood into the rice mixture. Cook for an additional 10-15 minutes until the seafood is cooked through and the rice is tender.
  6. Sprinkle the frozen peas over the paella and let them heat through for a few minutes.
  7. Remove the pan from the heat and let it rest for 5 minutes. Garnish with chopped parsley and serve with lemon wedges.
