Ingredients

  • 2 medium-sized squash
  • 1 cup cooked rice
  • 1 cup cooked black beans
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the squash in half lengthwise and scoop out the seeds to create a hollow cavity.
  3. In a large bowl, mix the cooked rice, black beans, onion, garlic, bell pepper, tomato, thyme, paprika, salt, and pepper.
  4. Stuff the squash halves with the rice and bean mixture, pressing down gently to pack the filling.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Place the stuffed squash in the skillet, stuffed side down, and cook for 5 minutes until golden brown.
