Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 4 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 red bell peppers, diced
  • 2 tomatoes, diced
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 3 cups beef broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef chunks and brown them on all sides. Remove the beef and set aside.
  3. In the same pot, sauté the onions, garlic, and red bell peppers until softened.
  4. Add the diced tomatoes, bay leaves, smoked paprika, thyme, salt, and pepper. Cook for a few minutes.
  5. Return the beef to the pot and add the diced potatoes and beef broth. Bring to a boil.
  6. Reduce the heat, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef and potatoes are tender.
  7. Adjust the seasoning if needed and serve hot.
