Ingredients
- 1 lb beef stew meat, cut into chunks
- 4 potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 red bell peppers, diced
- 2 tomatoes, diced
- 2 bay leaves
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 3 cups beef broth
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef chunks and brown them on all sides. Remove the beef and set aside.
- In the same pot, sauté the onions, garlic, and red bell peppers until softened.
- Add the diced tomatoes, bay leaves, smoked paprika, thyme, salt, and pepper. Cook for a few minutes.
- Return the beef to the pot and add the diced potatoes and beef broth. Bring to a boil.
- Reduce the heat, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef and potatoes are tender.
- Adjust the seasoning if needed and serve hot.
