Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 8 oz chorizo sausage, sliced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add the chorizo and cook until browned, about 5 minutes.
- Stir in the paprika and cayenne pepper, then add the diced potatoes. Cook for 2-3 minutes.
- Pour in the broth and bring to a boil. Reduce heat and simmer for 30-40 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste. Serve hot.
