Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 8 oz chorizo sausage, sliced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  2. Add the chorizo and cook until browned, about 5 minutes.
  3. Stir in the paprika and cayenne pepper, then add the diced potatoes. Cook for 2-3 minutes.
  4. Pour in the broth and bring to a boil. Reduce heat and simmer for 30-40 minutes, or until the potatoes are tender.
