Riojan-style Potatoes, or Patatas a la Riojana, is a classic dish from the Castilian-Manchego cuisine. This hearty and flavorful recipe features potatoes, chorizo, and a rich tomato sauce, making it a perfect comfort food for any occasion.
Ingredients
- 4 large potatoes, peeled and cut into chunks
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 200g chorizo, sliced
- 1 can (400g) of chopped tomatoes
- 1 red bell pepper, diced
- 2 bay leaves
- 1 teaspoon sweet paprika
- Salt and pepper to taste
- 3 cups chicken or vegetable broth
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the sliced chorizo and cook for a few minutes until it releases its oils.
- Stir in the chopped tomatoes, diced bell pepper, bay leaves, sweet paprika, salt, and pepper. Cook for 5 minutes.
- Add the potato chunks and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer for 40-45 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, adjust the seasoning if needed and serve hot.
