Patatas a la Riojana (Riojan-style Potatoes)

Ingredients

  • 4 large potatoes, peeled and cut into chunks
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 200g chorizo, sliced
  • 1 can (400g) of chopped tomatoes
  • 1 red bell pepper, diced
  • 2 bay leaves
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • 3 cups chicken or vegetable broth

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the sliced chorizo and cook for a few minutes until it releases its oils.
  3. Stir in the chopped tomatoes, diced bell pepper, bay leaves, sweet paprika, salt, and pepper. Cook for 5 minutes.
  4. Add the potato chunks and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer for 40-45 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, adjust the seasoning if needed and serve hot.
