Ingredients
- 2 large potatoes, cut into cubes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup diced tomatoes
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 tablespoon red wine vinegar
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the potato cubes with olive oil, salt, and pepper. Spread them on a baking sheet and bake for 20-25 minutes until crispy.
- Meanwhile, in a saucepan, combine the diced tomatoes, red onion, garlic, jalapeño, paprika, cayenne pepper, and red wine vinegar. Cook over medium heat for 10 minutes, stirring occasionally. Remove from heat and stir in the chopped cilantro.
- Once the potatoes are crispy, transfer them to a serving dish and top with shredded cheddar cheese. Place them back in the oven for 5 minutes to melt the cheese.
- Remove the potatoes from the oven and drizzle the spicy tomato salsa over the top.
