Patatas Rellenas al Horno de Gibraltar, or Gibraltar's Stuffed Baked Potatoes, is a traditional dish from Gibraltarian cuisine. This hearty and flavorful recipe is a perfect combination of tender baked potatoes filled with a savory mixture of ingredients.
Ingredients
- 4 large baking potatoes
- 1 cup cooked and shredded chicken
- 1/2 cup diced bell peppers
- 1/4 cup chopped onions
- 1/2 cup grated cheddar cheese
- 1/4 cup sour cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork. Rub the skins with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
- In a bowl, mix the shredded chicken, bell peppers, onions, cheddar cheese, and sour cream. Season with salt and pepper.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
- Mash the scooped-out potato flesh and mix it with the chicken mixture.
- Stuff the potato shells with the chicken and potato mixture, mounding it on top.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the filling is heated through and the tops are lightly browned.
- Serve hot and enjoy!
