Patate Ripiene (ligurian Style Stuffed Potatoes)

Ingredients

  • 4 large baking potatoes
  • 1 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  3. While the potatoes are baking, prepare the filling by mixing the grated Parmesan cheese, chopped parsley, olive oil, salt, and pepper in a bowl.
  4. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
  5. Mash the potato flesh and combine it with the filling mixture.
  6. Stuff the potato shells with the filling mixture and place them back in the oven for an additional 10-15 minutes, or until the filling is golden and crispy.
  7. Serve the stuffed potatoes hot and enjoy!
