Pato A La Gallega (galician Style Duck)
Pato a la Gallega, or Galician Style Duck, is a traditional dish from the Galicia region of Spain. This hearty and flavorful dish is a perfect representation of Galician cuisine, known for its emphasis on fresh, high-quality ingredients and simple yet delicious flavors.
Ingredients
- 1 whole duck, about 5 lbs
- 1 tablespoon sea salt
- 1 teaspoon black pepper
- 4 large potatoes, peeled and sliced
- 4 cloves garlic, minced
- 2 bay leaves
- 1/2 cup dry white wine
- 1/4 cup olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Prick the duck skin all over with a fork and rub with sea salt and black pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat. Add the duck, breast side down, and cook until browned, about 8 minutes per side.
- Remove the duck from the pot and set aside. Add the potatoes, garlic, and bay leaves to the pot, and cook for 5 minutes.
- Place the duck on top of the potato mixture, pour in the white wine, and cover the pot.
- Transfer the pot to the preheated oven and bake for 1.5 to 2 hours, or until the duck is tender and the potatoes are cooked through.
- Remove the pot from the oven and let the duck rest for 10 minutes before carving.
- Serve the duck and potatoes with the pan juices spooned over the top.
