Ingredients

  • 1 whole duck, about 5 lbs
  • 1 tablespoon sea salt
  • 1 teaspoon black pepper
  • 4 large potatoes, peeled and sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1/2 cup dry white wine
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prick the duck skin all over with a fork and rub with sea salt and black pepper.
  3. In a large Dutch oven, heat the olive oil over medium-high heat. Add the duck, breast side down, and cook until browned, about 8 minutes per side.
  4. Remove the duck from the pot and set aside. Add the potatoes, garlic, and bay leaves to the pot, and cook for 5 minutes.
  5. Place the duck on top of the potato mixture, pour in the white wine, and cover the pot.
  6. Transfer the pot to the preheated oven and bake for 1.5 to 2 hours, or until the duck is tender and the potatoes are cooked through.
  7. Remove the pot from the oven and let the duck rest for 10 minutes before carving.
  8. Serve the duck and potatoes with the pan juices spooned over the top.
