Patra ni Paneer (पत्रा नी पनीर)

Ingredients

  • 250g paneer, cubed
  • 10-12 colocasia leaves (patra)
  • 1 cup gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin-coriander powder
  • 1 tsp garam masala
  • 1 tsp sugar
  • 2 tbsp tamarind pulp
  • 2 tbsp jaggery, grated
  • 2 tbsp oil
  • Salt to taste
  • Water as needed

Instructions

  1. Wash and pat dry the colocasia leaves. Trim the stems and spread them out on a clean surface.
  2. In a bowl, mix gram flour, turmeric powder, red chili powder, cumin-coriander powder, garam masala, sugar, tamarind pulp, jaggery, oil, and salt. Add water gradually to make a smooth batter.
  3. Place a colocasia leaf on a flat surface and spread a thin layer of the prepared batter on the leaf. Place a few cubes of paneer on top and fold the sides of the leaf to form a roll. Repeat for the remaining leaves and paneer.
  4. Place the rolls in a steamer and steam for 20-25 minutes until the leaves are cooked and the batter is set.
  5. Heat oil in a pan and add the steamed rolls. Cook until the rolls are lightly browned on all sides.
  6. Serve hot with chutney or as a side dish.
