Patra ni Paneer (पत्रा नी पनीर)
पत्रा नी पनीर (Patra ni Paneer) is a delicious Parsi dish that combines the flavors of paneer with a unique blend of spices and herbs. This dish is a perfect blend of sweet and savory flavors, making it a popular choice for special occasions and gatherings.
Ingredients
- 250g paneer, cubed
- 10-12 colocasia leaves (patra)
- 1 cup gram flour (besan)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin-coriander powder
- 1 tsp garam masala
- 1 tsp sugar
- 2 tbsp tamarind pulp
- 2 tbsp jaggery, grated
- 2 tbsp oil
- Salt to taste
- Water as needed
Instructions
- Wash and pat dry the colocasia leaves. Trim the stems and spread them out on a clean surface.
- In a bowl, mix gram flour, turmeric powder, red chili powder, cumin-coriander powder, garam masala, sugar, tamarind pulp, jaggery, oil, and salt. Add water gradually to make a smooth batter.
- Place a colocasia leaf on a flat surface and spread a thin layer of the prepared batter on the leaf. Place a few cubes of paneer on top and fold the sides of the leaf to form a roll. Repeat for the remaining leaves and paneer.
- Place the rolls in a steamer and steam for 20-25 minutes until the leaves are cooked and the batter is set.
- Heat oil in a pan and add the steamed rolls. Cook until the rolls are lightly browned on all sides.
- Serve hot with chutney or as a side dish.
