Patsas Pleasure is a traditional Cypriot dish that is perfect for warming up on a cold day. This hearty soup is made with tripe and is packed with flavor, making it a favorite comfort food in Cyprus.
Ingredients
- 1 kg tripe, cleaned and cut into small pieces
- 1 onion, chopped
- 2-3 garlic cloves, minced
- 1/2 cup white wine
- 8 cups water
- Salt and pepper to taste
- Red wine vinegar for serving
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the tripe to the pot and cook until browned.
- Pour in the white wine and let it simmer for a few minutes.
- Add the water, salt, and pepper to the pot and bring to a boil.
- Reduce the heat and let the soup simmer for 4 hours, stirring occasionally.
- Serve the patsas hot, with a splash of red wine vinegar on top.
