Ingredients

  • 1 kg tripe, cleaned and cut into small pieces
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 1/2 cup white wine
  • 8 cups water
  • Salt and pepper to taste
  • Red wine vinegar for serving

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the tripe to the pot and cook until browned.
  3. Pour in the white wine and let it simmer for a few minutes.
  4. Add the water, salt, and pepper to the pot and bring to a boil.
  5. Reduce the heat and let the soup simmer for 4 hours, stirring occasionally.
  6. Serve the patsas hot, with a splash of red wine vinegar on top.
