Ingredients
- 1/2 cup vegetable oil

Instructions
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it reaches a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the pot, and cook until the vegetables are tender.
- Add the andouille sausage and chicken to the pot, and cook until the meats are browned.
- Pour in the chicken broth and diced tomatoes. Add the bay leaves, thyme, Cajun seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
- Remove the bay leaves and adjust the seasoning if needed. Serve the gumbo over cooked white rice and garnish with chopped green onions.
