Ingredients

  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 3 cups cooked white rice
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it reaches a dark brown color.
  2. Add the onion, bell pepper, celery, and garlic to the pot, and cook until the vegetables are tender.
  3. Add the andouille sausage and chicken to the pot, and cook until the meats are browned.
  4. Pour in the chicken broth and diced tomatoes. Add the bay leaves, thyme, Cajun seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
  5. Remove the bay leaves and adjust the seasoning if needed. Serve the gumbo over cooked white rice and garnish with chopped green onions.
