Pav Bhaji (bombay Street Style Pav Bhaji)

Ingredients

  • 6 medium potatoes, boiled and mashed
  • 1 cup mixed vegetables (peas, carrots, bell peppers), boiled and mashed
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 4 tomatoes, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, finely chopped
  • 2 tbsp Pav Bhaji masala
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 4 tbsp butter
  • 8 pav (bread rolls)

Instructions

  1. Heat 2 tbsp butter in a pan and sauté the onions until they turn translucent.
  2. Add the ginger, garlic, and green chilies. Sauté for 2 minutes.
  3. Add the chopped bell pepper and cook for 2-3 minutes.
  4. Add the tomatoes and cook until they turn mushy.
  5. Add the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
  6. Add the mashed potatoes and mixed vegetables. Mix and mash everything together.
  7. Add water if required to adjust the consistency. Simmer for 5-7 minutes.
  8. Toast the pav with butter on a griddle until they turn golden brown.
  9. Serve the hot Pav Bhaji with a dollop of butter, chopped onions, and a lemon wedge along with the buttered pav.
