Pav Bhaji Nachos

Ingredients

  • 1 cup boiled and mashed mixed vegetables (potatoes, peas, carrots, cauliflower)
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tbsp pav bhaji masala
  • 1 tsp red chili powder
  • Salt to taste
  • 1/4 cup butter
  • 1/2 cup grated cheese
  • 1 bag of nacho chips
  • Fresh coriander leaves for garnish

Instructions

  1. Heat butter in a pan and sauté the onions until they turn translucent.
  2. Add the bell pepper and tomatoes, and cook until the tomatoes are soft.
  3. Add the pav bhaji masala, red chili powder, and salt. Mix well.
  4. Add the mashed vegetables and mix until well combined.
  5. Spread the nacho chips on a baking tray and top with the pav bhaji mixture.
  6. Sprinkle grated cheese on top and bake in a preheated oven at 350°F for 5-7 minutes, or until the cheese melts.
  7. Garnish with fresh coriander leaves and serve hot.
