Pav Bhaji Queso Dip

Ingredients

  • 1 cup boiled and mashed mixed vegetables (potatoes, peas, carrots, cauliflower)
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 tomatoes, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon pav bhaji masala
  • 1 teaspoon red chili powder
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt to taste
  • 1 tablespoon oil
  • 1 tablespoon chopped cilantro for garnish

Instructions

  1. Heat oil in a pan and sauté the onions and garlic until they turn translucent.
  2. Add the green bell pepper and tomatoes, and cook until the tomatoes are soft.
  3. Add the pav bhaji masala, red chili powder, and salt. Mix well.
  4. Add the mashed vegetables and mix until well combined.
  5. In a separate pan, melt the butter and add the milk and shredded cheese. Stir until the cheese melts and the mixture is smooth.
  6. Pour the cheese mixture into the vegetable mixture and stir until well combined.
  7. Garnish with chopped cilantro and serve hot with pav or tortilla chips.
