Ingredients

  • 12 slider buns
  • 4 large potatoes, boiled and mashed
  • 1 cup mixed vegetables (peas, carrots, bell peppers), boiled and mashed
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2-3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2-3 green chilies, finely chopped
  • 1 tsp pav bhaji masala
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/4 cup cilantro, chopped
  • 2 tbsp butter
  • Salt to taste

Instructions

  1. Heat butter in a pan and add cumin seeds. Once they splutter, add onions, garlic, ginger, and green chilies. Sauté until onions are translucent.
  2. Add tomatoes and cook until they turn mushy.
  3. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
  4. Add the mashed potatoes and mixed vegetables. Mix thoroughly and cook for 5-7 minutes.
  5. Stir in chopped cilantro and remove from heat.
  6. Cut the slider buns in half and lightly toast them.
  7. Spread a generous amount of the pav bhaji mixture on the bottom half of each bun.
  8. Cover with the top half of the bun and serve hot.
