Pavo A La Gallega (galician Style Turkey)

Ingredients

  • 1 whole turkey, about 12 pounds
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 onions, sliced
  • 2 teaspoons sweet paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1 cup dry white wine

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the turkey and pat dry with paper towels.
  3. In a small bowl, mix the olive oil, minced garlic, sweet paprika, salt, and black pepper.
  4. Rub the turkey with the olive oil mixture, including under the skin and inside the cavity.
  5. Place the sliced onions and bay leaves in the bottom of a roasting pan. Pour the white wine over the onions.
  6. Place the turkey on top of the onions and bay leaves in the roasting pan.
  7. Cover the roasting pan with foil and roast the turkey in the preheated oven for 1 hour.
  8. Remove the foil and continue roasting for another 1 hour, basting the turkey with the pan juices every 20 minutes.
  9. Once the turkey is cooked through and golden brown, remove it from the oven and let it rest for 15 minutes before carving.
