Pavo A La Gallega (galician Style Turkey)
Pavo a la Gallega, or Galician Style Turkey, is a traditional dish from the Galicia region of Spain. This recipe features tender turkey cooked with flavorful ingredients that are characteristic of Galician cuisine.
Ingredients
- 1 whole turkey, about 12 pounds
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 onions, sliced
- 2 teaspoons sweet paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 cup dry white wine
Instructions
- Preheat the oven to 350°F (175°C).
- Rinse the turkey and pat dry with paper towels.
- In a small bowl, mix the olive oil, minced garlic, sweet paprika, salt, and black pepper.
- Rub the turkey with the olive oil mixture, including under the skin and inside the cavity.
- Place the sliced onions and bay leaves in the bottom of a roasting pan. Pour the white wine over the onions.
- Place the turkey on top of the onions and bay leaves in the roasting pan.
- Cover the roasting pan with foil and roast the turkey in the preheated oven for 1 hour.
- Remove the foil and continue roasting for another 1 hour, basting the turkey with the pan juices every 20 minutes.
- Once the turkey is cooked through and golden brown, remove it from the oven and let it rest for 15 minutes before carving.
