Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 ripe peaches, peeled and sliced
- 1/4 cup peach jam
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, and salt; gradually stir into the creamed mixture.
- Spread the batter evenly into the prepared pan. Arrange peach slices over the top of the batter. Drop small spoonfuls of peach jam over the peaches.
- Bake for 40 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
- Cool in the pan on a wire rack. Serve warm or at room temperature.
