Peach Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup fresh or frozen peaches, diced
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Gently fold in the diced peaches.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and gently mix until the dough comes together.
  7. Transfer the dough to a floured surface and pat it into a circle about 1 inch thick.
  8. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  9. Bake for 18-20 minutes, or until the scones are golden brown.
  10. Allow the scones to cool slightly before serving.
