Ingredients
- 1 cup unsalted peanuts
- 1 onion, chopped
- 3 garlic cloves, minced

- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 4 boneless, skinless chicken thighs
- 6 cups chicken broth
- 1/2 cup long-grain white rice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, toast the peanuts over medium heat until golden and fragrant, about 5 minutes. Remove from the pot and set aside.
- In the same pot, sauté the chopped onion and minced garlic until softened, about 5 minutes.
- Add the ground cumin, dried oregano, and paprika to the pot, and cook for an additional 2 minutes to toast the spices.
- Add the chicken thighs and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Add the toasted peanuts and white rice to the pot. Simmer for an additional 20 minutes, or until the rice is tender and the soup has thickened.
- Season the soup with salt and pepper to taste.
- Serve the peanut and chicken soup hot, garnished with fresh cilantro.
