Ingredients

  • 1 cup unsalted peanuts

  • 1 teaspoon paprika
  • 4 boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 1/2 cup long-grain white rice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, toast the peanuts over medium heat until golden and fragrant, about 5 minutes. Remove from the pot and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until softened, about 5 minutes.
  3. Add the ground cumin, dried oregano, and paprika to the pot, and cook for an additional 2 minutes to toast the spices.
  4. Add the chicken thighs and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Add the toasted peanuts and white rice to the pot. Simmer for an additional 20 minutes, or until the rice is tender and the soup has thickened.
  7. Season the soup with salt and pepper to taste.
  8. Serve the peanut and chicken soup hot, garnished with fresh cilantro.
