Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed
  • 1 cup carrots, julienned
  • 1/2 cup peanuts, unsalted
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
  3. Add the red bell pepper, green beans, and carrots. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.
  4. Add the peanuts, soy sauce, and honey. Stir well to combine and cook for an additional 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Remove from heat and serve the Sauté de Légumes aux Arachides hot.
