Madesu au Mafé, also known as Peanut Beef Stew, is a traditional dish from Congolese cuisine that is rich, flavorful, and perfect for a comforting meal.
Ingredients
- 1 1/2 lbs beef, cut into cubes
- 1 cup peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cups beef broth
- 1/2 cup tomato paste
- 1/2 cup chopped peanuts
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef cubes and cook until browned on all sides.
- Add the chopped onion and cook until softened.
- Stir in the peanut butter, tomato paste, paprika, and cayenne pepper.
- Pour in the beef broth and add the diced tomatoes.
- Season with salt and pepper, then bring to a simmer.
- Cover and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
- Serve the Madesu au Mafé hot, garnished with chopped peanuts.
