Peanut Beef Stew (Madesu au Mafé)

Ingredients

  • 1 1/2 lbs beef, cut into cubes
  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cups beef broth
  • 1/2 cup tomato paste
  • 1/2 cup chopped peanuts
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef cubes and cook until browned on all sides.
  3. Add the chopped onion and cook until softened.
  4. Stir in the peanut butter, tomato paste, paprika, and cayenne pepper.
  5. Pour in the beef broth and add the diced tomatoes.
  6. Season with salt and pepper, then bring to a simmer.
  7. Cover and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Serve the Madesu au Mafé hot, garnished with chopped peanuts.
