Peanut Brittle (spicy Shenga Chikki)
Peanut Brittle, also known as Spicy Shenga Chikki, is a popular sweet and spicy snack from Uttara Karnataka Cuisine. It is a delicious combination of crunchy peanuts, jaggery, and a hint of spice, making it a perfect treat for any occasion.
Ingredients
- 2 cups raw peanuts
- 1 cup jaggery
- 1/2 teaspoon red chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1 tablespoon ghee
- 1/2 teaspoon baking soda
Instructions
- In a heavy-bottomed pan, dry roast the raw peanuts over medium heat until they are lightly browned and fragrant. Remove from the pan and set aside.
- In the same pan, melt the jaggery over low heat, stirring constantly until it reaches a caramel-like consistency.
- Add the roasted peanuts, red chili powder, salt, ground cumin, ground coriander, ground turmeric, and ghee to the melted jaggery. Mix well to coat the peanuts with the jaggery mixture.
- Turn off the heat and quickly stir in the baking soda. The mixture will foam up.
- Immediately pour the hot mixture onto a greased surface and spread it out thinly using a greased rolling pin.
- Allow the peanut brittle to cool and harden completely before breaking it into pieces.
