Peanut Butter Chicken Stew (Igitoke n'Inyama ye Kuku)
Igitoke n'Inyama ye Kuku, also known as Peanut Butter Chicken Stew, is a traditional Rwandan dish that is rich, flavorful, and comforting. This hearty stew is made with tender chicken, creamy peanut butter, and a blend of aromatic spices, creating a delicious and satisfying meal.
Ingredients
- 1.5 kg chicken, cut into pieces
- 1 cup smooth peanut butter
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp paprika
- 1 tsp cayenne pepper
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Chopped fresh cilantro for garnish
Instructions
- Season the chicken pieces with salt, pepper, paprika, and cayenne pepper.
- In a large pot, heat the vegetable oil over medium heat. Add the seasoned chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chopped tomatoes to the pot and cook until they are soft and have released their juices.
- Return the browned chicken pieces to the pot. Pour in the chicken broth and bring the stew to a simmer. Cover and cook for 45-50 minutes, or until the chicken is tender.
- In a small bowl, mix the peanut butter with a ladle of the hot liquid from the stew to thin it out. Stir the thinned peanut butter into the stew until well combined.
- Simmer the stew for an additional 10 minutes, stirring occasionally, until the sauce has thickened.
- Adjust the seasoning with salt and pepper to taste.
- Serve the Peanut Butter Chicken Stew hot, garnished with chopped fresh cilantro.
