Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup peanut butter
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1/2 cup tomato paste
- 1 teaspoon ground cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the red bell pepper and cook for another 2-3 minutes.
- Stir in the peanut butter, vegetable broth, diced tomatoes, tomato paste, and cayenne pepper.
- Simmer for 20-25 minutes, stirring occasionally.
- Season with salt and pepper to taste.
