Peanut Chicken Stew (Madesu au Mafé)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 cup creamy peanut butter
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups chicken broth
  • 2 tomatoes, diced
  • 1/2 cup tomato paste
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, sauté the onions and garlic until softened.
  3. Add the peanut butter, ginger, paprika, and cayenne pepper to the pot, stirring to combine with the onions and garlic.
  4. Pour in the chicken broth, diced tomatoes, and tomato paste. Stir well to combine all the ingredients.
  5. Return the chicken to the pot, cover, and simmer for about 1 hour, or until the chicken is tender and the sauce has thickened.
  6. Season with salt and pepper to taste, and garnish with chopped cilantro before serving.
