Peanut Chicken Stew (Madesu au Mafé)
Madesu au Mafé, also known as Peanut Chicken Stew, is a traditional dish from Congolese cuisine that is rich, flavorful, and comforting. This hearty stew is made with tender chicken, creamy peanut butter, and a blend of aromatic spices, creating a delicious and satisfying meal.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 cup creamy peanut butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups chicken broth
- 2 tomatoes, diced
- 1/2 cup tomato paste
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Add the peanut butter, ginger, paprika, and cayenne pepper to the pot, stirring to combine with the onions and garlic.
- Pour in the chicken broth, diced tomatoes, and tomato paste. Stir well to combine all the ingredients.
- Return the chicken to the pot, cover, and simmer for about 1 hour, or until the chicken is tender and the sauce has thickened.
- Season with salt and pepper to taste, and garnish with chopped cilantro before serving.
