Peanut Chicken Stew (Mafé)

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup peanut butter
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 1 cup chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the peanut butter, tomatoes, and chicken broth.
  5. Add the chopped carrots, potatoes, paprika, salt, and pepper.
  6. Reduce the heat, cover the pot, and let the stew simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Adjust the seasoning if needed and serve the Mafé hot with rice or crusty bread.
