Ingredients
- 1 whole chicken, cut into pieces
- 1 cup peanut butter
- 2 onions, chopped
- 3 tomatoes, diced
- 1 cup chicken broth
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the peanut butter, tomatoes, and chicken broth.
- Add the chopped carrots, potatoes, paprika, salt, and pepper.
- Reduce the heat, cover the pot, and let the stew simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Adjust the seasoning if needed and serve the Mafé hot with rice or crusty bread.
