Ingredients

  • 1 cup rice flour
  • 1/2 cup urad dal (black gram lentils)
  • 1/2 cup peanuts
  • 4-5 dried red chilies
  • 1 small onion, chopped
  • 1/2 inch ginger, chopped
  • 1/4 cup fresh coriander leaves
  • Salt to taste
  • Water as needed
  • Oil for cooking

Instructions

  1. In a bowl, mix the rice flour with water to make a smooth batter. Let it rest for 4-5 hours.
  2. In a separate bowl, soak the urad dal for 4-5 hours.
  3. In a pan, dry roast the peanuts and dried red chilies until the peanuts are golden brown. Let them cool.
  4. In a blender, combine the roasted peanuts and chilies with onion, ginger, coriander leaves, and salt. Grind to a coarse paste without adding water.
  5. Heat a non-stick pan and pour a ladleful of the rice flour batter. Spread it in a circular motion to make a thin crepe.
  6. Drizzle some oil around the edges and cook until the bottom is golden brown. Flip and cook the other side.
  7. Spread a spoonful of the peanut chutney on one half of the crepe and fold it over.
  8. Repeat with the remaining batter and chutney.
  9. Serve the Peanut Chutney Crepes hot with coconut chutney or a side of sambar.
