Ingredients
- 1 cup rice flour
- 1/2 cup urad dal (black gram lentils)
- 1/2 cup peanuts
- 4-5 dried red chilies
- 1 small onion, chopped
- 1/2 inch ginger, chopped
- 1/4 cup fresh coriander leaves
- Salt to taste
- Water as needed
- Oil for cooking
Instructions
- In a bowl, mix the rice flour with water to make a smooth batter. Let it rest for 4-5 hours.
- In a separate bowl, soak the urad dal for 4-5 hours.
- In a pan, dry roast the peanuts and dried red chilies until the peanuts are golden brown. Let them cool.
- In a blender, combine the roasted peanuts and chilies with onion, ginger, coriander leaves, and salt. Grind to a coarse paste without adding water.
- Heat a non-stick pan and pour a ladleful of the rice flour batter. Spread it in a circular motion to make a thin crepe.
- Drizzle some oil around the edges and cook until the bottom is golden brown. Flip and cook the other side.
- Spread a spoonful of the peanut chutney on one half of the crepe and fold it over.
- Repeat with the remaining batter and chutney.
- Serve the Peanut Chutney Crepes hot with coconut chutney or a side of sambar.
