Ingredients
- 1 cup creamy peanut butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 4 cups vegetable broth
- 1 sweet potato, peeled and diced
- 1 cup chopped collard greens
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the ground ginger and cook for another minute.
- Stir in the peanut butter until well combined.
- Pour in the vegetable broth and add the sweet potato.
- Simmer for 30 minutes, or until the sweet potato is tender.
- Add the collard greens and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
