Peanut Soup (Mafé)
Mafé, also known as Peanut Soup, is a popular dish in Congolese cuisine. This hearty and flavorful soup is made with a rich peanut sauce and tender meat, creating a comforting and satisfying meal.
Ingredients
- 1 1/2 lbs boneless beef, cut into cubes
- 1 cup peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1 sweet potato, peeled and diced
- 4 cups beef or vegetable broth
- 1/2 cup tomato paste
- 1/2 cup chopped collard greens
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onion and tomatoes, and cook until the onions are translucent.
- Stir in the peanut butter, tomato paste, and sweet potato.
- Pour in the broth and bring the mixture to a boil.
- Reduce the heat, cover, and simmer for 45 minutes, or until the beef is tender.
- Add the collard greens and cook for an additional 10 minutes.
- Season with salt and pepper to taste.
- Serve the Mafé hot and enjoy!
