Peanut Soup (Mafé)

Ingredients

  • 1 1/2 lbs boneless beef, cut into cubes
  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 sweet potato, peeled and diced
  • 4 cups beef or vegetable broth
  • 1/2 cup tomato paste
  • 1/2 cup chopped collard greens
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onion and tomatoes, and cook until the onions are translucent.
  3. Stir in the peanut butter, tomato paste, and sweet potato.
  4. Pour in the broth and bring the mixture to a boil.
  5. Reduce the heat, cover, and simmer for 45 minutes, or until the beef is tender.
  6. Add the collard greens and cook for an additional 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the Mafé hot and enjoy!
